Making Tortillas
There is nothing quite like a fresh homemade corn tortilla. The surprising thing is that tortillas are so easy to make once you know how. The only ingredients you need are 2 cups masa harina (corn flour) ½ cup of water give or take a little and a pinch of salt. Mix the water into the flour and salt until a thick dough forms. Add more water if too dry or more masa if too wet. Roll the dough into 11/2 – 2 inch balls (about the size of a dough nut hole) Cover the bowl with a damp cloth. Heat a un greased griddle or comal over medium high heat on the stove. You can now form the balls into tortillas either using your hands, a rolling pin, a tortilla press or my favorite method two plates. Take two pieces of waxed paper and place one piece on a plate. Put down a ball of dough cover with the other sheet of paper then use the other plate to press it flat. This will make a tortilla about the size of a tea saucer. If you want a bigger tortilla you will need to use a rolling pin. Cook each tortilla for 1-2 minutes on each side. Place on a plate and cover with a clothe to keep warm until all the tortillas are done. They are now ready to be eaten. You can top them with just about anything you like, beans, cheese, taco meat, etc. On of my favorite ways to eat them is with butter, honey and Cinnamon, delicious! |
